Tasting Note
Bright salmon-pink with fine persistent bubbles. Aromas of wild strawberries, dried rose, citrus peel and light brioche. Palate is creamy, crisp and mineral-driven with red-berry fruit, subtle toasted notes and a refreshing, long finish.

Food Pairing
Oysters, chilled shellfish, smoked salmon, seafood risotto, sashimi/sushi, tempura, grilled white fish, light poultry salads, Asian ceviche and citrus-driven Thai or Vietnamese seafood dishes.

Production Method
Metodo Classico (traditional bottle fermentation). Brief Pinot Noir maceration, stainless-steel fermentation, assembled and aged ~30–36 months on lees; Extra Brut dosage.
