Tasting Note
Dense ruby red. Aromas of blackberry, cherry, aromatic herbs and vanilla. Full-bodied and rounded with ripe dark-fruit concentration, integrated tannins, balanced acidity and a smooth, slightly spicy finish.

Western: roasted or braised red meats, beef stew, mushroom risotto, aged cheeses. Asian: char siu/BBQ pork, Korean bulgogi, Sichuan-style beef, rich teriyaki dishes.

Production Method
Hand-selected grapes from certified organic vineyards; washing and drying of each bunch; fermentation in small oak casks; bottle ageing at least five months; total SO2 <43 mg/L.
