Tasting Note
A complex, intensely aged Franciacorta: toasted brioche, almond, honeyed apple, dried citrus peel, flint and gentle autolytic notes. Vibrant acidity, fine persistent mousse and a saline, persistent finish.

Food Pairing
Oysters, caviar, lobster or shellfish risotto, smoked salmon, goat cheese tart, sushi and sashimi, tempura, miso-glazed fish, delicate Asian shellfish dishes, light poultry in cream or citrus sauces.

Production Method
Traditional method (méthode classique). Primary fermentation partly in oak pièces (≈5 months), extremely long lees aging (~42 years: 7 years bottles lying, ~34 years sur pointe). Dosage Zéro; disgorged on request.
