Tasting Note
Intense salmon-pink with a very fine perlage. Aromas of wild strawberry, cherry compote, blood orange, brioche and toasted hazelnut with saline-mineral accents. Concentrated yet precise on palate, vibrant acidity, creamy texture and a long, savory finish.

Western: caviar, smoked salmon, lobster, grilled salmon, roast chicken, creamy cheeses. Asian: sushi/sashimi, tempura, spicy Thai salads, Chinese dim sum, grilled miso-glazed black cod.

Production Method
Metodo Classico with saignée maceration (few hours) of Pinot Noir; fermentation ~8 months in small oak barrels, secondary bottle fermentation and ~8 years sur lies; Extra Brut dosage.
