Tasting Note
Opaque, dense black-fruit core of blackberry, black cherry and cassis with dried fig, spice, liquorice and pencil-shaving notes; full-bodied, concentrated, ripe grippy tannins and a very long, chocolate-tinged finish.

Food Pairing
Western: slow-roasted beef short ribs, venison pie, aged cheddar. Asian: miso-glazed aubergine, Korean BBQ (bulgogi/galbi), char siu or Sichuan braised beef.

Production Method
Gently destemmed, small-lot fermentations, extended maturation (typically 3–4 years) in 100% new French oak with repeated barrel selection before bottling.

A collaboration between winemaker Chris Ringland and vigneron Adrian Hoffmann; sourced from old-vine parcels at the Hoffmann/Dimchurch vineyard in Ebenezer, Northern Barossa; small allocation release.
