Tasting Note

Opaque, concentrated dark-fruited Shiraz: blackberry and black cherry compote, black pepper, licorice, clove, mocha and savory notes of beetroot, black pudding and lamb fat. Rich, plush tannins and long, spicy finish.


Food Pairing

Western: slow-roasted beef short ribs, venison or lamb dishes, beef stew, aged cheddar. Asian: char siu or Korean BBQ beef, spicy Sichuan beef, beef rendang, miso-glazed aubergine.


Production Method

Grapes gently destemmed and vinified in small batches; extended maturation in French oak (commonly 3–4 years, occasionally up to 6). Barrels periodically tasted and selected before final blending and bottling.


Vineyard Info

A Hoffmann Vineyard collaboration—fruit from old vines at Ebenezer selected by 5th-generation vigneron Adrian Hoffmann; produced by Chris Ringland in Angaston. 2014 production was very limited (~325 dozen).
