Tasting Note

Ripe black cherry and cassis with plum, spice, rose petal and licorice; medium–full body, supple melting tannins, saline minerality and smooth oak. Elegant, plush palate with a persistent, savory finish.

Roast lamb, beef or game, duck confit and hard cheeses; Asian pairings: Peking duck, char siu, Korean BBQ, soy-braised short ribs, mushroom stir-fries.


Production Method

Hand-harvested fruit, partial whole-cluster fermentation; matured 18–24 months in a mix of new/used barriques, large foudres and amphorae.
