Tasting Note
Pale lemon-green; aromas of lemongrass, jasmine and green apple with wet-stone/mineral notes. Palate is zesty lemon-lime with a light waxy texture, bright, racy acidity and a saline, mid‑to‑long finish. Youthful now but will develop honeyed complexity with age.

Western: oysters, grilled white fish (sole, cod), lemon chicken, goat cheese, shellfish pasta. Asian: sushi/sashimi, Vietnamese lime-and-herb chicken salad, Thai fish curry (lighter styles), steamed prawns with chilli-lime dipping sauce.

Early-picked fruit chilled, crushed and pressed; cool stainless-steel fermentation with neutral yeasts; no oak, no malolactic fermentation; early bottling to preserve fresh aromatics.
