Tasting Note
Perfumed red cherry, raspberry and plum with wild thyme, rose petal, underbrush and rooibos/tea leaf. Bright acidity, layered texture, peppery spice and chalky, ripe tannins lead to a long, savory finish.
Food Pairing
Western: roasted duck, roast chicken, mushroom risotto, grilled salmon, soft cheeses. Asian: Peking duck, miso-glazed black cod, teriyaki salmon, shiitake stir-fry, Korean BBQ.
Production Method
Made from estate fruit; fermented with ~90% whole clusters, minimal intervention. Aged ~10–12 months in French oak (small percentage new) to preserve site expression.
Vineyard Info
Founded in 1996 by Greg Brewer and Steve Clifton. Wines sourced from estate vineyards (3D, Machado, Hapgood, Perilune). Joined Jackson Family Wines in 2017; Greg Brewer remains the winemaker.
