Tasting Note
Bright cranberry, pomegranate and ripe red cherry with rose petal, Earl Grey tea leaf, savory herbs and cool minerality. Medium-bodied, silky texture, refined tannins and a long, savory finish.
Food Pairing
Western: roast duck, mushroom risotto, grilled salmon, pork tenderloin, soft cheeses. Asian: Peking duck, miso-glazed salmon, Korean bulgogi, char siu, shiitake and soy braised dishes.
Production Method
Small-lot, mostly whole-cluster fermentations with a 7-day cold soak, extended maceration; aged in neutral French oak barrels (minimal new oak).
