Bright lemon and lime with white peach and jasmine, wet stone salinity, ginger and toasted brioche. Medium–full-bodied, brisk acidity, textured mid‑palate and a long, saline finish.
Food Pairing
Western: grilled lobster, roasted chicken, creamy pasta, crab cakes, beurre blanc fish. Asian: miso‑glazed black cod, seared scallops with soy‑butter, richer sushi (toro), tempura, light Thai fish dishes.
Production Method
Blend of 3D, Machado and Hapgood lots; gentle whole‑cluster pressing, barrel fermentation in mostly neutral French oak, aged on lees with restrained malolactic influence and minimal new oak.
