Tasting Note
Blackberry, plum and dark cherry with cedar, graphite, tobacco and violet florals. Medium-full body, fine-grained but firm tannins, polished oak and a savory, lingering cedary finish.
Food Pairing
Western: roast leg of lamb, beef ribeye, duck confit, mushroom risotto, aged Comté or Manchego. Asian: Peking duck, char siu, Korean BBQ (bulgogi), soy-braised short ribs, umami mushroom stir-fries.
Production Method
Traditional Bordeaux vinification: destemming and fermentation with 20–30 day maceration, malolactic fermentation, then 12–18 months ageing in French oak (≈60–70% new).
