Tasting Note
Rich dried fruits, dark chocolate, candied orange, toasted almonds and treacle toffee, with gentle coastal peat smoke and a saline, warming spiced finish.

Food Pairing
Western: dark chocolate, blue/aged cheeses, roast lamb, game, cured meats. Asian: smoked salmon/sushi, yakitori, Korean BBQ, char siu, mildly spicy Thai or Szechuan dishes.

Production Method
Distilled in copper pot stills; matured at least 15 years in American ex-bourbon casks and finished in European Oloroso sherry casks (notably final 3 years).
