Tasting Note
Perfumed red and black cherry, plum and wild berries with spice, licorice and dark chocolate notes; medium-bodied, fine-grained firm tannins, minerality and a long, elegant finish.

Food Pairing
Western: roast duck, lamb, grilled beef, game, mushroom risotto, aged cow cheeses. Asian: Peking duck, char siu, braised short ribs, teriyaki beef, shiitake mushroom stir-fries.

Production Method
Hand-harvested; partial destemming; fermentations in vats with gentle extraction; élevage 12–14 months in French oak (approx. 40–50% new).
