Tasting Note
Powerful, layered Chardonnay with citrus, white peach, honeycomb and toasted almond, intense wet-stone minerality, creamy mid-palate and a long, saline, ginger-tinged finish.

Western: lobster, scallops, roasted chicken, foie gras, creamy pasta; Asian: steamed crab, miso-glazed black cod, sushi (fatty tuna), Cantonese-style roasted pork.

Production Method
Hand-harvested; whole-bunch pressing; fermented and aged 16–20 months in French oak (25–30% new), with final maturation in large foudres.
