Tasting Note
Perfumed citrus (tangerine, mandarin) and musky peach with hazelnut, lanolin and nutmeg. Satiny medium–full body, bright acidity, saline minerality and a long, precise, ethereal finish.

Food Pairing
Western: lobster with butter, scallops, roast chicken with herb cream, creamy pasta, soft cheeses (Brie, triple cream). Asian: sashimi or sushi, miso-glazed cod, crab rangoon, lightly spiced Thai fish dishes, Cantonese steamed fish.

Production Method
Hand-harvested fruit from four terraces; careful sorting, gentle pressing, fermented and aged in oak (barrels and foudres), malolactic managed; bottled under DIAM closure. Organic conversion in progress.

Bouchard Père & Fils, founded 1731 in Beaune, is a major Burgundy house owning ~130 ha. They hold ~2.33 ha in Chevalier-Montrachet across all terraces, producing classic Grand Cru whites.
