Ink-dark blackberries and cassis with graphite, bay leaf, wild sage and menthol. Concentrated core, ultra-fine yet brisk tannins, bright spine of acidity and a long, mineral-tinged finish.

Western: grilled ribeye, roasted lamb, venison, mushroom risotto, aged cheddar. Asian: Peking duck, Korean BBQ (bulgogi), char siu, miso-glazed dishes, rich Cantonese roasted meats.

Production Method

Hand-harvested fruit, small-lot fermentations and extended maceration; aged approximately 18–20 months in French oak barrels (significant proportion new), lightly filtered before bottling.
