Tasting Note

Dense blackcurrant and blackberry fruit with cedar, graphite, tobacco and wild herb notes; muscular yet finely textured, with firm grainy tannins, bright freshness and a long, mineral-tinged finish.

Roasted ribeye, grilled lamb chops, venison, mushroom risotto, aged cheddar/Comté; Asian: Korean BBQ (galbi/bulgogi), Chinese braised beef, miso-glazed black cod, Japanese wagyu/teriyaki.


Production Method

Hand-harvested, small-lot fermentations and macerations; matured in French oak barrels (site-specific élevage) before bottling.
