Tasting Note
Perfumed Syrah of black cherry, plum and blackberry with violets, white pepper and anise. Savory, smoky/meaty undertones, graphite-mineral lift and black cardamom; silky texture and powdery tannins with a long spicy finish.

Western: grilled lamb, roast beef, braised short ribs, venison, aged hard cheeses. Asian: Szechuan pepper beef, Korean BBQ, char siu, spicy lamb kebabs, miso-braised aubergine.
Production Method
Hand-harvested Syrah fermented in tulip-shaped concrete tanks with ~60–65% whole-bunch, native yeast ferments, délestage during maceration; basket-pressed and aged ~18 months in large Austrian Stockinger foudres and demi-muids.
