Tasting Note
Perfumed nose of black cherry, violets and boysenberry with smoked bacon, incense and spice. Medium–full-bodied, fine-grained cocoa-like tannins, vibrant acidity and a savory, peppery finish with olive, liquorice and dark chocolate notes.
Food Pairing
Western: grilled lamb, venison, beef steaks, roasted root vegetables, aged cheeses; Asian: Korean BBQ, char siu, Sichuan-style beef, Thai basil stir-fries, yakitori.
Production Method
Hand-harvested; ~60% whole-bunch, native-yeast fermentation in tulip-shaped concrete tanks; gentle délestage, basket-pressed to 2,500L foudres and 600L demi-muids; aged ~18 months.
