Tasting Note
Bright citrus and tangerine with white peach, honeysuckle and chamomile; waxy lanolin, toasted almond and subtle honey notes. Mineral backbone, creamy texture and long, citrus-oil finish.

Western: sea bass tartare, grilled scallops, roast chicken, pork with herb butter, creamy cheeses. Asian: sashimi/sushi, steamed fish with ginger & spring onion, Thai prawn salad, lightly spiced Cantonese or Sichuan white-meat dishes.
Production Method
Bunch-pressed; fermented in French oak barriques and Nomblot concrete eggs; no malolactic fermentation; aged ~13 months with a portion in new/used French oak.
