Tasting Note
Waxy, stony Semillon with orange blossom, jasmine, nectarine and citrus zest, subtle struck-match reduction, beeswax and lemongrass, bright saline minerality and a long, mouthwatering finish.

Western: roast chicken, lemon butter fish, creamy pasta, aged Gouda; Asian: sushi/sashimi, tempura prawns, Vietnamese grilled fish, mildly spiced Thai or Chinese seafood dishes.
Production Method
Grapes from three heritage parcels; spontaneous fermentation, ~70% matured in new French oak, remainder in concrete eggs and clay amphora; ~14 months élevage for texture and complexity.
