Tasting Note
Rich, honeyed citrus (tangerine, lemon curd) with nectarine, almond and lanolin notes; creamy texture, bright saline minerality and taut acidity, finishing long and slightly bitter-almonded.
Food Pairing
Western: roast chicken, buttery lobster, pork belly, creamy seafood pasta. Asian: sushi/sashimi, Cantonese steamed fish, Thai green-curry (milder heat), Vietnamese spring rolls.
Production Method
Hand-harvested old-vine Semillon; low-temperature maturation (~14 months) in oak with no sulphur addition to inhibit malolactic fermentation, oxidative texturing to build structure.
