Tasting Note
Perfumed cassis and blackberry with violet and graphite notes; dark plum, tobacco leaf, cedar and dark chocolate. Fresh acidity, chalky/chewy tannins and a long, savory finish with herbaceous thyme and black olive hints.

Production Method
Hand-harvested fruit; cooled, destemmed and cold maceration in tulip-shaped concrete tanks; spontaneous fermentation (27–30°C); natural malolactic in 225L barriques; ~22 months élevage in ~75% new French oak (light toast).
