Tasting Note
Concentrated blackcurrant and blackberry with graphite, mint and violet notes; cedar, dark chocolate and mocha underpin fine-grained tannins and a long, herbaceous finish.

Food Pairing
Grilled ribeye, roast lamb, beef short ribs, aged cheddar; Asian: Korean BBQ (galbi), char siu, Sichuan-style beef, teriyaki or miso-glazed beef, spicy Szechuan noodles.

Production Method
Fully destemmed and fermented, matured ~22 months in French oak barriques (majority new) with reduced barrel toast; blended with ~5% Cabernet Franc for lift.
