Tasting Note

Blackcurrant and blackberry with violet, graphite and cedar; tobacco, black pepper and sweet oak notes; fine powdery tannins, bright acidity and a long savory finish.

Western: grilled ribeye, roast lamb, braised beef, beef stew, aged cheddar. Asian: Korean BBQ (bulgogi), char siu, beef bulgogi, Peking duck, spicy Sichuan beef or Cantonese roasted meats.


Production Method

Destemmed fruit, spontaneous fermentation in concrete vats; matured ~22 months in French oak barriques (c.225L), ~80% new.
