Tasting Note
Bright cherry and blackberry, strawberry and violet florals with blood-tinged earth and chalky minerality; juicy, bright acidity and fine creamy tannins; medium-bodied with a lively, persistent finish.

Food Pairing
Western: roast lamb, grilled pork, mushroom risotto, tapas and aged Manchego. Asian: Korean BBQ, char siu (Cantonese roast pork), teriyaki chicken, yakitori and mildly spiced Sichuan dishes.

Production Method
Fermented in small concrete tanks with indigenous yeasts; matured ~4–7 months in concrete and bottled unoaked from organic vineyards.
