Tasting Note
Red and black cherries, plum and wild bramble with savory herbs, chalky minerality, subtle cocoa/coffee and iodine notes; fine dusty tannins and a savory, medium-long finish.

Food Pairing
Western: roast lamb, braised beef, mushroom risotto, aged cheeses. Asian: Peking duck, char siu, Korean BBQ (bulgogi), soy-braised pork belly (dongpo rou).

Production Method
Organically farmed, hand-harvested; fermented with indigenous yeasts in large concrete vats; aged ~14 months in 1,500–2,500L oak foudres and some 225L French oak barrels.
