Tasting Note
Fresh red and blue fruits, violet and field herbs with mineral, white-pepper spice; fine-grained, chalky tannins, taut acidity and an extremely long, elegant finish.

Food Pairing
Western: grilled lamb, roast beef, tapas, aged Manchego, mushroom risotto. Asian: Korean BBQ (bulgogi), char siu or soy-glazed pork, Peking duck, spicy Sichuan beef.

Production Method
Organically farmed old-vine field blend. Hand-harvested (Oct 2021), fermented with indigenous yeasts in large open-top oak vats, matured 14–16 months in 1,500L foudres and oak barrels.
