Tasting Note
Red cherry and wild strawberry with violet and dried-rose florals, fennel/anise and cracked black pepper; mineral undercurrent, fine mealy tannins, elegant acidity and a long savory finish.

Production Method
Hand-harvested from old bush vines, organic farming, native-yeast fermentation in open oak vats, aged ~15–16 months in large oak casks/foudres, bottled unfined and unfiltered.
