Ripe tropical and citrus fruits (passionfruit, pineapple, lemon) with brioche, toasty vanilla and a smoky, spicy note. Creamy texture, juicy acidity and a long, layered finish.

Food Pairing

Western: roast chicken, pork belly, creamy seafood pasta, seared scallops. Asian: miso-glazed cod, sushi and sashimi, tempura, mild Thai green curry or Vietnamese spring rolls.

Production Method

Barrel-fermented in older French barriques using wild (indigenous) yeasts; underwent partial malolactic fermentation and matured on lees for ~10 months before bottling. Small-lot, limited production.
