Tasting Note
Bright, zesty Sauvignon Blanc with lemongrass, grapefruit and passionfruit, green capsicum and fresh herb notes. Pronounced wet-stone/mineral and oyster-shell character, racy acidity and a crisp, lingering finish.

Western: oysters, ceviche, goat cheese salad, grilled white fish, green salads with vinaigrette. Asian: sashimi/sushi, Vietnamese spring rolls, green papaya salad, Thai herb-forward dishes, light seafood stir-fries.

Production Method
Cold stainless-steel fermentation (8–10°C) to preserve aromatics; typically no oak. Some cuvées see short lees contact for texture. Bottled under screwcap.
