Tasting Note
Dark amber with notes of dried fig, orange marmalade, toffee, caramel, clove and sandalwood. Rich, viscous and sweet yet lifted by bright acidity and a long saline, nutty finish.
Food Pairing
Western: crème brûlée, fruit tarts, dark chocolate, blue cheeses (Stilton), foie gras. Asian: mango sticky rice, pandan/coconut custards, Chinese mooncakes, egg tarts, sweet glazes (char siu).
Production Method
Fermented on the island, fortified to stop fermentation, then matured ~10 years in seasoned American oak casks using the traditional canteiro system (barrels moved from warmer to cooler floors), with regular racking; fined/filtered before bottling.
