Tasting Note
Amber colour with aromas of figs, prunes, toffee, vanilla and sugared walnuts. Medium-rich palate of caramel, coffee and dried fruit, balanced by bright acidity and a smooth, persistent finish.

Food Pairing
Western: foie gras, blue cheese, aged gouda, dark chocolate desserts, fruitcake. Asian: Cantonese roast pork, Chinese mooncakes, red-braised pork, mango sticky rice, nut-based desserts.

Production Method
Fortified to ~19% ABV and matured an average of 10 years in seasoned American oak casks using the traditional Canteiro system; racked and fined before bottling.
