Tasting Note
Bright grapefruit and white peach with floral notes, wet-stone/mineral and saline finish; medium–full-bodied with lively acidity and silky texture.

Food Pairing
Western: oysters, seared scallops, grilled sea bass, lemon-roast chicken, goat-cheese tart. Asian: sashimi/sushi, seafood hot pot, Thai green papaya salad, Vietnamese spring rolls.

Production Method
Fermented partly in temperature-controlled barrels (c.50–75%); aged ~6 months on lees with regular bâtonnage; ~50% new oak used.
