Bright lemon and white peach with hazelnut, wet stone and flinty minerality, delicate leesy cream and saline finish; precise acidity and long, textured palate.
Food Pairing
Western: roast lemon chicken, seared scallops, butter-poached lobster, creamy mushroom pasta. Asian: miso‑glazed cod, soy-pan seared barramundi, tempura prawns, Cantonese steamed fish, milder Thai coconut curries.
Production Method
Whole-press, wild (native) yeast fermentation to French oak; 10–11 months on lees in French barrels (c.30–35% new); minimal intervention, unfined/lightly filtered.

Family-owned Bindi vineyard on Mount Gisborne; small plantings at ~500m elevation on quartz-rich soils; low-yield, tiny production (c.150–250 dozen). Vines from the original planting (reported 1988).
