Tasting Note
Bright lemon and white peach, nectarine and lime oil with pronounced wet-stone/quartz minerality, toasted almond/cashew and gentle spice from oak, creamy lees texture, saline lift and a long chalky finish.
Food Pairing
Roast chicken with beurre blanc, butter-poached lobster, creamy pasta with mushrooms; Asian: miso-glazed black cod, tempura prawn, chicken katsu, richer sushi (salmon/ebi).
Production Method
Hand-harvested, whole-bunch pressing, native (spontaneous) fermentation in French oak (approx. 30–35% new), 11–12 months on lees, minimal intervention, light SO2 addition.
Vineyard Info
Bindi is a small family estate on Mount Gisborne (est. 1988), ~6 ha at ~500m. 'Quartz' comes from a half-hectare, quartz-rich parcel; low-input viticulture, crafted by Michael Dhillon.
