Tasting Note
Cool-climate, concentrated Chardonnay with citrus, white peach and stone fruit, roasted almond and hazelnut notes, wet-stone minerality, subtle spice and creamy lees texture. Bright acidity, mouthfilling and very long, mineral-driven finish.

Western: roast chicken, butter-poached lobster, creamy mushroom risotto, pork belly, grilled salmon. Asian: miso-glazed black cod, tempura prawns, Cantonese-style steamed fish, richer sushi (salmon/tuna), mild Thai dishes.
Production Method
Whole-bunch press to French oak; natural (wild) fermentation without cultured yeasts; aged 10–16 months on lees in French barrels (25–35% new); limited malo; minimal racking, no fining, light filtration.

Bindi (Bill & Michael Dhillon) established 1988 on Mount Gisborne, Macedon Ranges. Small-production, terroir-focused estate using organic practices since 2005, specialising in cool-climate Chardonnay and Pinot Noir from quartz-rich soils.
