Tasting Note
Crisp lemon and pear with orange-zest and white stone-fruit, layered with nutmeg, wet stone/mineral tones and fine oak; textured, mouthfilling and long with bright acidity and saline, mineral finish.

Western: roast chicken, lobster/creamy shellfish, mushroom risotto, pork belly. Asian: miso-glazed cod, soy-miso salmon, seared scallops with ginger, delicate tempura prawns.
Production Method
Estate-grown chardonnay, native (wild) fermentation straight to French oak, lees ageing 8–16 months with ~25–35% new oak; minimal racking, no fining and light filtration.
