Tasting Note
Inky dark-fruited Shiraz with black cherry, plum, black pepper, floral and smoky spice. Silky, mouthfilling texture with plush, fine-grained tannins, vibrant acidity and a long, savory finish.

Food Pairing
Roast lamb, grass-fed ribeye, beef short ribs, aged cheddar, duck confit; Asian: Korean BBQ, Chinese char siu, Sichuan beef, Indian lamb curry, miso-glazed eggplant.

Production Method
Hand-harvested fruit; wild/ambient fermentation in 1,000L open vats with partial whole-bunch; matured ~12 months in French oak (≈10% new).
