Tasting Note
Perfumed red cherry and wild strawberry with underbrush, spice and subtle cedar. Silky, medium-bodied palate, bright pomegranate acidity, fine tannins and a long, fragrant finish.

Food Pairing
Western: roast duck, mushroom risotto, grilled salmon, lamb chops, soft cheeses. Asian: Peking duck, char siu pork, miso-glazed salmon, teriyaki chicken, shiitake soba.

Production Method
Hand-harvested, mostly de-stemmed, fermented in small open-top vats with gentle plunging; aged 15–17 months in French oak (≈25–35% new); minimal intervention and light filtration.
