Tasting Note
Vibrant cool‑climate Chardonnay: lemon/grapefruit zest, white peach, orange blossom, struck flint, cashew/almond and subtle creamy lees. Chalky minerality, taut acidity and fine, long finish.

Western: roast chicken, creamy pasta, seared scallops, oysters, grilled white fish. Asian: miso‑glazed black cod, tempura prawns, richer sushi/nigiri, steamed fish with ginger & scallions, Cantonese-style seafood.
Production Method
Whole‑cluster press, native yeast fermentation in French barriques (≈20–30% new). Aged 8–10 months on lees with minimal malolactic conversion; coarse filtration and small SO₂ addition before bottling.

Boutique Bindi estate (family‑run) in the Macedon Ranges. Chardonnay planted 1988; Kostas Rind comes from a dedicated 1.5 ha block. Michael Dhillon oversees winemaking.
