Tasting Note
Bright lemon, lime and grapefruit with nectarine, white florals, chalky mineral and almond-meal notes; subtle biscuity oak, creamy texture, racy acidity and a long, focused, chalky finish.
Food Pairing
Western: roast chicken, crab, lobster, creamy pasta, pork belly, soft cheeses. Asian: sashimi/sushi, miso-glazed fish, tempura prawns, steamed fish with ginger & soy, Thai green papaya salad, light Chinese seafood dishes.
Production Method
Hand-harvested; tray-pressed, native (wild) yeast fermentation in French oak (c.20–25% new); 10–11 months on lees with minimal malo-lactic conversion; light filtration then bottling.
