Tasting Note
Lean, mineral-driven Chardonnay with orange blossom, nectarine stone, almond/nutty spice and lemon/grapefruit brightness. Tight, vibrant acidity, creamy lees texture and a long, chalky, precise finish.

Western: roast chicken with lemon, pan-fried white fish, seared scallops, creamy pasta, oysters. Asian: miso-glazed black cod, tempura prawns, salmon nigiri, lightly spiced Thai fish cakes.
Production Method
Hand-harvested, destemmed (c.5% whole cluster). Native fermentation in French barriques (c.20–30% new), 10–11 months on lees, minimal malolactic, coarse filtration before bottling.
