Tasting Note
Lean, mineral-driven Chardonnay with orange blossom, nectarine and lemon zest, flinty/gunflint notes, creamy lees and subtle spice. Bright acidity, focused texture and a long, chalky finish.

Western: roast chicken, seared scallops, buttered lobster, creamy pasta, grilled trout. Asian: steamed fish with ginger & spring onion, sushi/sashimi, tempura prawns, mild Thai or Vietnamese seafood dishes.
Production Method
Hand-harvested, whole-bunch partly retained (small percent), barrel-fermented in French barriques (c.20–30% new) with native yeasts, lees aging and minimal malolactic conversion before bottling.

Produced by Bindi from a 1.5 ha block planted in 1988 on volcanic/shattered-quartz soils at ~500m elevation. Small, family-run estate practicing low-input/organic viticulture.
