Tasting Note

Bright citrus and white-peach core with nectarine and lemon-curd notes, flinty/mineral edge, gentle nutty oak and creamy lees texture, taut acidity and a long, focused finish.

Western: grilled or pan-fried sea bass, roast chicken with lemon-butter sauce, creamy mushroom pasta, soft cheeses (Brie, Camembert). Asian: tempura prawns, sashimi/clean-flavored sushi, steamed fish with ginger & scallions, mild coconut-based Thai or Vietnamese seafood dishes.


Production Method

Hand-harvested; native yeast fermentation in French oak (c.20–25% new); aged on lees ~11 months with minimal malolactic conversion; bottled after gentle racking and sterile filtration.

Bindi Wines (Dhillon family) estate in Macedon Ranges. Small-scale producer; Chardonnay planted 1988. Kostas Rind is a 1.5 ha parcel from original vines, produced in limited quantities.
