Tasting Note
Vibrant, mineral-driven Chardonnay with lemon, grapefruit, white flowers and nectarine, creamy lees and subtle cashew/oak notes; taut, chalky texture, bright acidity and a long, precise finish.
Food Pairing
Western: roast lemon chicken, crab cakes, creamy pasta, seared scallops, pork loin. Asian: miso-glazed salmon, sushi/ sashimi (white fish), tempura prawns, steamed dumplings, light Vietnamese rolls.
Production Method
Hand-harvested; native-yeast fermentation in French oak (≈20–25% new); ~11 months on lees with limited malolactic conversion; racked, returned to barrel then bottled after sterile filtration and SO2.

Bindi Wines (Dhillon family) estate vineyard; vines planted 1988 on quartz-rich volcanic soils. Single 1.5ha block, small-production and practicing organic viticulture.
