Tasting Note

Fragrant rose and forest-floor earth with wild red fruits; juicy, creamy palate, mouth-filling with chewy tannins and a balanced, long finish.


Food Pairing

Western: roast duck, pork belly, mushroom risotto, grilled salmon. Asian: Peking duck, char siu, miso-glazed fish, teriyaki chicken, mushroom stir-fry.


Production Method

Hand-harvested; destemmed and native whole-berry ferment in open-top vats; ~14 days on skins; matured ~15 months in 228L French oak barriques (≈30% new); minimal SO2, no fining, gentle filtration.
