Tasting Note
Perfumed red-fruited pinot: rose and cherry aromatics with strawberry, rhubarb and sweet spice. Palate is fresh, supple and textured with fine-grained tannins, bright acidity and a lingering, earthy finish.
Food Pairing
Western: roast duck breast, mushroom risotto, roast pork, lamb ragu. Asian: hoisin or Peking duck, miso-glazed salmon, pork belly with five-spice, shiitake ramen or sambal eggplant.
Production Method
100% de-stemmed, open-vat fermentation with wild yeast; matured ~10–11 months in French oak barrels (about 10–15% new). Bottled earlier than estate single-vineyard pinots.

Bindi is a boutique Macedon Ranges producer established with first plantings in 1988. Winemaker Michael Dhillon champions minimal intervention and sustainable/organic practices; Dixon is a declassified blend from the Original (1988) and Kaye (2001) plantings.
