Tasting Note
Delicately pale pink with rose-petal, red currant and under-ripe strawberry aromas; crisp, dry and textured palate with watermelon, alpine strawberry and a long, saline finish.

Food Pairing
Western: grilled salmon, roast chicken, goat cheese, charcuterie, Niçoise salad. Asian: sushi/sashimi, Vietnamese spring rolls, Thai grilled prawns, mild Sichuan dishes, Korean BBQ (lean cuts).

Production Method
A few hours skin contact, gentle pressing; fermented to dryness without added yeast in old French barrels and matured 5–6 months on lees (partial malo decisions).
